|Pecan Chicken Salad Sandwiches|
Ingredients2 cups cooked, diced chicken (1/2-inch dice)
1 1/2 cups California seedless grapes, halved
1 cup pecans, coarsely chopped, toasted
1 cup mayonnaise
1/2 cup green onions, thinly sliced
1/2 cup celery, diced (1/4-inch dice)
2 tablespoons fresh basil, chopped
1 tablespoon fresh lemon juice
1/4 teaspoon each salt and pepper
12 slices bread, or 6 sandwich rolls
6 lettuce leaves
DirectionsCombine all ingredients except bread and lettuce in a medium bowl; mix well. To make sandwiches, place about 3/4 cup salad on 6 bread slices or bottom half of sandwich rolls. Top with lettuce and remaining bread.
Serving SuggestionsMakes 6 sandwiches, or 4 1/2 cups chicken salad.
